The Best "Bliss" Balls Ever. For Real.

It's been raining a constant thick rain for two days and two nights.  I woke up this morning feeling silent.  The house quiet and empty.  It was chilly and reminded me of my days living in Vancouver- but this would have been November maybe, not August.  On days like this, they can only be passable by listening to belle & sebastian, drinking hot tea, and baking. 

Bliss Balls.  I had my first one YE AR S ago at the 'sweet c' in Vancouver.  I had been googling for quite some time a recipe that looked perfect- and I just couldnt find one.  I ended up taking a recipe and completely changing it to suit the things I would like- and they are seriously, seriously.... seriously delicious.  Not only that- but they are easy.  I last made these for a camping trip, I imagined hiking and taking 'bliss breaks', but my fiance and me had them eaten by the time we were only an hour or so away from home in the car. (Also, please note I do not have a fancy camera... actually... I dont have a camera at all.  So I hope the android photo's are good enough!)

Bliss Balls

8 Dates
boiling hot water
1 1/2 cups nuts (anything you want.  I usually use mixed, but this time I am using all walnuts.)
1 1/2 Tablespoons cocoa powder
2 Tablespoons real maple syrup
1/2 teaspoon Vanilla Extract
coconut

Directions:
place the dates in a bowl and cover with boiling hot water.  Let soak for about 3-5 minutes or until soft.
In a food processor, add nuts, cocoa, maple syrup, and vanilla.  When dates are ready, using a fork remove them from the water and add dates to the food processor.  Discard the hot water.  Process until well mixed, mixture will be very sticky and have little chopped fragments of nuts.
Roll into balls and roll in coconut.  Place in a tupperware container, and then refridgerate.  Eat right away or later- makes about 10 little tim bit sized balls, and I actually have NO IDEA how long they are good for, because theyre ALWAYS eaten within 48 hours.
